Heavenly Peanut Butter Chocolate Bars
Starting out on Trim Healthy Mama, I knew one thing for certain. I was a 100%, undeniable sugar addict. My personal struggle was with Coca-Cola, Reese's Peanut Butter Cups, Kit Kats and Hostess Cupcakes. Ladies, it was real, it was raw, and it was sad. I knew letting go of sugar in all of its luscious forms was going to be the biggest struggle in my journey, so I devised a plan.
First, I sought to rid my home of the most egregious offenders. Those 4 items at least had to be gone.
Next, I had to come up with a suitable replacement so that when the cravings would strike, I had something in a quick, arm's distance reach that I could grab to sweetly satisfy. For soda, I found Zevia Cola, and while honestly, my first love was Coca-cola, I found it to be an adequate replacement, and would basque in the glory of my healthier choice. Frankly, that good feeling was enough to make up for the difference in taste.
My next challenge was the divine paring of peanut butter and chocolate. That oh-so decadent culinary masterpiece, the Reese's Peanut Butter Cup. Now, here I did not attempt to make a duplicate, but only to capture the joy and pleasure of the combo good enough to stop myself from running to the store to get a bar!
So here it is. My Heavenly Peanut Butter Chocolate Bars which mostly live in my freezer until I am ready to enjoy them! They are delicious, and they make my Drive Through Sue heart happy because they taste like my favorite old junk food and to not involve my stove or oven! I hope they help you too!
Heavenly Peanut Butter Chocolate Bars
Trim Healthy Mama (S)
Ingredients:
1 Cup Shredded Coconut (Unsweetened)
1/2 Cup Peanut Butter (Sugar Free) (Or favorite Nut Butter)
1/2 Cup Butter
1/2 Cup Chopped Nuts (I usually use Sundae Topping)
1/2 Cup Gentle Sweet
1/2 Cup Trim Healthy Mama Chocolate Chips or Lily's Chocolate Chips
1/4 Cup Flaxmeal
1 Pinch Mineral Salt
1 Splash of Vanilla (Optional)
Tools:
1 Large Bowl
1 Mixing Spoon
1 bar mold or 9x9 dish (parchment paper optional)
Steps:
1. In a large bowl add Nut Butter and Butter. Melt in the Microwave, being mindful not to over cook, and mix together well.
2. Add all other ingredients except the Chocolate Chips and mix well.
3. Allow mixture to cool a bit and then add Chocolate Chips. Mix well and then spoon into your bar molds or a prepared 9x9 dish (I line it with parchment paper to make removal easier later.)
4. Freeze until firm. I store these in the freezer so that they stay nice and solid and just thaw them a couple minutes before eating. If you made it in a 9x9 dish, cut into 8 to 10 sections.
